I know I've spent the past decade with everyone in Texas, but I'm not the biggest fan of Sweet BBQ. What I like is the richness of my barbecue flavor - even spicy. When I first tried Carolina pull pork, I thought it was perfect. The Carolina spice perfectly combines a rich sweetness that pairs well with the juicy, tender pull pork.
When I learned how to use the Instant Pot, I knew the list of recipes that Carolina pull pork had to be made at home. Hope you like this simple recipe as much as I do!

Ingredient notes
Pork tenderloin: I recommend using boneless pork for this instant pot Carolina pull pork recipe as I divide it into even brown in the instant pot. The best cut for making pork in an instant pot is pork shoulder (also known as pork butt), which is also called Boston butt or Boston barbecue. If you can't see it in the store, I find that grocery store butchers are usually happy to cut it for you.
Spice rub: What makes Carolina pull pork is spice rub, which includes a bunch of kindness, including the following:
- Onion powder
- chili
- Garlic powder
- Chili powder
- sea salt
- Grind black pepper
- Cayenne powder
- Dried mustard
- Cumin
- Coconut sugar
vinegar: I used a combination of white vinegar and apple cider vinegar, which was slightly sweet. I found this combo to be the best Carolina BBQ flavor.
Coconut sugar: Carolina BBQ has a sweet flavor, so I chose to use coconut sugar, which has less processed sugar than brown sugar. You can read more about why I like coconut sugar in my favorite post on my favorite natural sweetener.
Chicken soup: I added low-sodium chicken broth to the instant pot for more flavor. You can replace it with water if you like.

What is Carolina Pulled Pork?
As far as I understand, there are two types of Carolina barbecue styles: North Carolina and South Carolina.
In North Carolina, pork is usually brushed with spices and vinegar mop while cooking. Then, the sides are served with a tomato sauce based on the sauce.
However, South Carolina tends to use whole pigs, not just shoulders (I use shoulders in this recipe). South Carolina style also adds to the rub or mustard in the sauce.
When I use Pork Shoulder (North Carolina), I blended the two styles of recipes, but I also added mustard sauce (North Carolina) to the dry mustard.
How to Make Carolina Pulled Pork
It's very easy to get Carolina to pull pork in an instant pot. Here are the basic steps:
Prepare pork
- Divide the pork butt (shoulder) into 4 pieces of similar size
- Add all the dry ingredients to a large bowl and stir together.
- Add pork cubes to wipe the mixture.
Roasted pork
- Add the olive oil to the instant pot and set.
- Once it means hot, add the pork, but don't squeeze it.
- Bake evenly on each side for about 2 minutes.
- Remove the pork and place it on a plate.
- Repeat the remaining pork minced pieces.
- Once roast the pork and remove it from the pan.
Prepare instant pot
- Using a wooden spoon, remove clothes on the bottom of the pan with chicken broth. Make sure to scratch all positions.
- Add remaining chicken soup and vinegar.
Cook pork
- Place the pork cubes directly into the liquid in the pot, spaced as far as possible.
- Secure the cover and make sure the vents are set as sealed.
- Pressure cooking is carried out under high pressure for 60 minutes.
- Allow the pressure to release naturally for 20 minutes or until the pin drops.
- Move the pork to a large bowl and chop with 2 forks.

Expert tips
- Choose the correct cut: Choose a boneless pork shoulder or pork butt for the best pull pork. Since this type of cut is relatively high in fat, you will have more juice, tenderer pork.
- Wait for the fat to be trimmed: After cooking, you can easily remove excess fat from the pork, so place it in the instant pot for added flavor.
- Before baking: The meat that soaks the spice rolls beforehand will add flavor to the pork.
- Keep liquid: Once you have chopped the pull pork, put it back into the instant pot and throw it away with the reserved liquid to add more flavor and juiciness to the pork.

Instant Pot Carolina Pulled Pork
