Simple Solo Parenting Dinner Ideas

I shared some simple dinner ideas when I was parenting myself.
Hi, friends! Are you OK? Hope you have enjoyed this week so far! Pilates, I had a podcast interview today and we might be on the pool. We are working on our last little bit of life in the summer before going back to school madness.
In today’s post, I want to share some of my favorite simple dinner ideas when I was raising my child alone. Since the pilot returns with the airline, he travels more regularly and my crew here puts it down. When he left, the meals were more casual. I know we all love things that can be done in less than 20 minutes. Usually, I make something that includes leftovers so we can have lunch the next day.
For our family, meals will include some type of protein, some type of starch, a fruit and/or vegetables. It makes it beautiful with the plug, and when kids have round meals like this they will be happier (no blood sugar crash), maybe a little snack? (Although it makes us a reality, summer is a snack avalanche throughout the day.)
Here are some things I have only in my spins and I want to cook something delicious, healthy and quick.
Simple Solo Parenting Dinner Ideas
– Dinner and breakfast.
We do this at least once a week, regardless of whether the pilot is here or not, because it is a pleasant person and you can customize it according to your identity. I might make Hello Kitty gluten-free waffles, pancakes (they still love these banana pancakes over the years), French toast and use it with breakfast sausage, bacon or eggs as protein and some fruit.
– Tacos, rice and beans.
I put the chicken in an instant pot with oregano, salt, pepper, garlic powder and some chicken stock and cook for 12 minutes manually. I chopped it with a blender and served with tortillas, beans, Mexican rice and gua. I will cut off the fresh fruit we have on our hands and set it aside.
– Spanish tortillas.
This is one of our favorites of all time. I can cook tortillas, usually with just sliced vegetables and tortillas, and one side of the fruit.
– Greek salad bowl.
Here is another family favorite: chopped salad (you can use the kit to make life easier, or just chop long cheese, tomatoes, red onions, cucumbers, and add kalamata olives and feta), cooked chicken (grilled or leftover chicken), hummus (store or homemade grapes), and grapes I bought (I bought ones that I can buy). Place the pita bread on the side.
– Gluten-free chicken nuggets
I ordered from Butcherbox and served with salad and fruit. Easy peasy.
– Ramen with chopped chicken or shrimp.
I will buy ramen from Whole Foods (they have some gluten-free options) and add chopped chicken or sautéed shrimp and cut into fruit on the sides.
– Stir the fried noodles bowl.
I’ll sauté a ton of vegetables (bell pepper, onion, broccoli, carrots, whatever we have on our hands) and add cooked noodles with peanut butter and peanut butter, tortillas, tamari, rice wine vinegar, sesame oil, garlic, ginger, ginger, Sririracha and honey. I cook the veggies and noodles while they are cooked and everything is so fast. I usually top with sesame seeds and cilantro.
– Salmon Sushi Roll Bowl.
We have this often, too. It’s just cooked rice (cooked in an instant pot with equal soup/water and rice), salmon (cooked with fries), cucumber, edamame, avocado and seaweed.
– Egg rolls in a bowl.
Simply stir-fry some minced meat with dish, garlic, ginger and tamari, sriracha and sesame oil. Everything else is OK except bagel seasoning. I will eat it with fresh fruit – just anything we have on hand.
-Homemade pizza.
Dough, sauce, pepperoni, cheese, and served with salad or grilled vegetables.
– Pan rice!
We especially love the organic chicken sausages from Costco, Bell Peppers and Groccoli
– Kevin’s Sauce Meal.
This is another fan favorite. Kevin’s makes amazing seasonings – I buy them from a thriving market – I just cook a lot of vegetables, add chicken, steak, salmon or shrimp, and add Kevin’s sauce to the rice. We love Teriyaki, Korean BBQ and Coconut Curry.
– Turkish meatballs with pasta, sauce and vegetables.
I usually make turkey meatballs ahead of time and then freeze them to simplify/fast food. This is my recipe
