Ingredient notes
sweet potato: I love adding mashed potatoes to pancake recipes, especially in the fall. They add flavor and nutrition depth and work perfectly in higher carb recipes like pancakes and these sweet potato tortillas. Here are more sweet potato recipes! If you don’t care about sweet potatoes, you can swap them with pumpkin or butternut squash. You can also use bananas like my banana protein pancakes.
protein: Because I really focused on increasing the total protein in this recipe, I swap the whole egg with the egg white. However, you can use the whole egg for more thick fluffy pancakes. These pancakes will maintain a good balance with the already heavy mashed potatoes.
Cinnamon: Sweet potato and cinnamon just got together. Also, adding cinnamon will increase the sweetness of the pancakes. You can leave it out or replace it with nutmeg If you want.
Flaxseed meal: I added some flaxseed meals to add omega-3 in this recipe and it also helps thicken the pancakes, considering the absence of egg yolks.
Vanilla Protein: Ah, protein powder is very helpful in increasing the total protein of the pancake without adding more protein. I used clean vanilla bean plant protein to add sweetness to the pancake recipe and it worked well. Make sure to choose a protein powder that tastes good in itself and has simple ingredients to make sure it helps improve the pancakes.
