These two-ingredient English muffins require no yeast, rising time, or oven. Seriously! They’re fluffy on the inside, crispy on the outside, and super versatile.

I bake mine with almond butter and berries, my husband turns his into a breakfast sandwich, and my kids always sneak in something from the cooling rack!

They freeze beautifully, reheat in seconds, and are super fun to customize (perfect for mini pizzas and avocado toast!). Perfect for meal prepping during the week or when you want something hot with your coffee!

before starting

I have made these muffins more times than I can count! These tips will help you nail down the texture from your first batch.

  • Use full-fat or nonfat Greek yogurt. Both work well. Just avoid using regular yogurt as it will be too thin for the dough.
  • Buy self-rising flour. This can be found at any grocery store or made from scratch with all-purpose flour, baking powder, and salt! Please see the FAQ for details.
  • Sprinkle with cornmeal. Optional but classic. It adds that signature English muffin texture and helps prevent sticking.
  • Don’t over knead. Just turn it a few times on a floured surface to smooth the dough.

How to Make Two-Ingredient English Muffins

This is exactly how I make these English muffins on the stove, getting fluffy golden brown results every time.

1. Mix the dough

In a large bowl, combine self-raising flour and Greek yogurt. Mix until a fluffy dough forms. If sticky, add more flour.

2. Knead and shape

Turn dough out onto a lightly floured surface. Knead gently until smooth. Divide into equal pieces and shape into discs.

3. Add corn flour

Sprinkle top and bottom with cornmeal, if using. This gives a classic texture and makes them easier to handle!

4. Cook on the stove

Heat a nonstick pan or griddle over medium-low heat. Cook the waffles in batches, pressing lightly with a spatula. They should puff up and turn golden brown.

Pro tip: Don’t press hard while cooking. You want them to rise and stay fluffy!

5. Slice and serve

Cool slightly, then separate with a fork (for all those nooks and crannies!). Toast the bread if desired and top with your favorite items.

Tips and tricks for better waffles every time

These tips will help make the dough easier to work with and make the waffles fluffier, crispier, and better for freezing.

  • Let the dough rest before shaping. A brief 10-15 minute rest will make the dough easier to handle and help it rise better while cooking.
  • Don’t skip the cornmeal if you can. Even if it’s not traditional for you, it will add a subtle crunch and prevent sticking without the need for additional oil.
  • Use cookie cutters or jar lids to create even shapes. This can help if you want a more even muffin, especially for breakfast sandwiches.
  • Freeze dough disks. Shape the muffins and line them with parchment paper to freeze. Cook directly from frozen, pan frying takes a little longer.
  • Place the puff pastry side down on a dry pan and bake. No toaster required! This will give you a crispy interior without drying them out.

How to eat English muffins

Looking for some inspiration? Here are some of my favorite ways to serve English muffins:

  • Make breakfast sandwiches. By adding a fried or scrambled egg, a slice of cheese, and a layer of bacon or sausage, you can create the breakfast sandwich of your dreams in no time. No need to run Dunkin Donuts!
  • Spread nut butter on top. From almonds to peanuts to cashews, nut butters are packed with heart-healthy fats and beneficial nutrients, making them a great addition to a healthy breakfast or snack.
  • Spread jam or fruit preserves on top. If you prefer a sweeter breakfast, try slathering these breakfast breads with jam or homemade fruit preserves. This berry chia jam would be delicious.
  • Make avocado toast. Everyone’s favorite breakfast! I am no exception. This recipe is the perfect base for amazing avocado toast. Don’t forget to sprinkle them with sesame seeds and sea salt, you’ll thank me later!
  • Use them to make homemade pizza. For a quick and easy lunch, add some pizza sauce and mozzarella cheese to the waffles and pop them in the toaster oven. In just a few minutes, you can enjoy delicious homemade pizza. The breakfast pizza is also delicious!

Store and reheat

Make a double batch and stash some away! These reheat well for an easy breakfast on busy mornings.

  • Shop: Store cooked muffins in an airtight container in the refrigerator for up to 1 week.
  • Frozen (cooked): Freeze in a single layer, then transfer to bags and store for up to 3 months.
  • Reheat: Place in a toaster or skillet until hot and crispy.

FAQ

Below you will find answers to some of the most frequently asked questions about this dish:

Can I make the dough ahead of time and refrigerate it overnight?

Yes! You can definitely prepare the dough ahead of time. Just wrap it tightly and refrigerate overnight. Let it sit at room temperature for about 20 minutes before shaping and cooking to make it easier to work with and ensure better expansion in the pan.
