This asparagus quiche is my go-to when I want to make breakfast feel a little special, or I just need a quick lunch or light dinner. Not only is it wholesome, it is also easy to make (a meal, anyone?), and the taste is absolutely decadent.

My family loves it (especially with baked potatoes or fresh salad side) and I love that the week of preparation is easy. It works well as a brunch dish, too, especially when you host and want something that can be served at room temperature.

If you want to really show off your chef skills, you can whip your own pie crust from scratch. However, I usually choose store-bought pie crust for convenience. All you have to do is fill the crust with egg mixture and fresh vegetables and sit and relax to bake perfectly.

Before you begin

Here are some useful tips for making the best quiches:

  • Cook the vegetables first. Stir-fried asparagus and onions will bring flavor and help prevent quiches.
  • Buy with the store: To make things easier, I just used a store-bought refrigerated pie crust as a recipe. Make sure to cook until golden brown. If you make a homemade pie crust, you will need to use a 9-inch pie board. Then cook the homemade crust before pouring into the egg mixture.
  • Use what you have. Don’t be afraid to swap cheese or add extra veggies!

How to Make Asparagus Quiche

Here’s how to make this healthy quiche recipe:

1. First cook vegetables

Cook the asparagus spear and onion before adding it to the dish. When you add raw vegetables to the quiche, they release water while cooking, causing the egg ust to burst. Therefore, for creamy, silky quiches, the vegetables should be cooked before adding them to the dish. I like to cook the vegetables until they are tender so that I can take a bite into the quiche.

2. Use the bottom rack of the oven

Boil egg cakes on the oven base rack. This way, the bottom of the quiche will brown slightly when cooking, making it crisp.

3. Bake or not

Some recipes require you to bake the pie crust (blind bake) beforehand to make it a little more crispy. Personally, I did a great job and didn’t pre-bake, but feel free to give it a try if you like the extra crispy quiche.

4. decorate

For a stunning speech, garnish with some cracked black pepper and a bunch of fresh herbs you like.

Quiche, asparagus, eggs and cheese are sliced and served on two plates.

Recipe changes and ideas

If you’re looking for a mix, here are some of my best suggestions:

  • Add Bacon: Who doesn’t like bacon? Add some chopped bacon to the quiche to give it a lot of delicious flavor. Please note that adding bacon will naturally increase the saltiness of the dish, so you don’t have to add that much salt in the future.
  • Switch cheese: I love the mozzarella and feta combination, but you can absolutely modify the cheese choice to better suit your taste buds. For a more complex feel, I recommend trying aged guda, gruyère or creamy goat cheese.
  • Add dried tomatoes: The flavorful sun-dried tomatoes with asparagus and eggs were very good. Cut them into small pieces and throw them into the mixture.
  • Make it low in carb: For low carb changes, you can make this asparagus quiche covered. Just pour the ingredients directly into a non-stick baking dish. Depending on the size of the pan, you may want to add some extra eggs. To make this egg cake extra low-carb, try substituting whole-fat dairy instead of skim milk and partial Skim Mozzarella cheese.
  • Add some fresh herbs: If you want extra flavor and freshness, add some fresh herbs to the dish before it. Some of my best choices include parsley, dill, chives and thyme.

  • For brunchI recommend you to eat this quiche with some easy-to-grill potatoes or vegetables. These carbohydrate-grilled root vegetables are perfect.

Frequently Asked Questions

Here are some of the most common questions about this healthy omelet recipe:

Can I use frozen asparagus instead of fresh?

Yes, frozen asparagus can be a great alternative. Just make sure it melts completely, then dry it with a paper towel and sauté it on paper towel. Frozen vegetables tend to release excess moisture, so drying them helps prevent moist quiches.

When should you eat quiche?

Egg cakes will be eaten soon after they come out of the oven and once cooled for about 10 minutes. If you plan to save it for later, you should wrap it and store it after it cools. It is best to heat the quiche, so after pulling it out of the refrigerator, heat it in the oven or microwave before digging.

How do I make sure my quiche isn’t wet?

To prevent quiche from getting wet, you want to use as much dry stuffing as possible. Vegetables will dry when they are cooked, so make sure the vegetables you want to add to the quiche will be pre-cooked.

How to reheat the remaining quiche?

Reheat slices in microwave (30-60 seconds) or oven (350°F for 10-15 minutes). If reheat from freezing, bake in foil until heated and then exposed to make the top crisp.
