Baked Eggs with Avocado is one of those recipes that shouldn’t work, but it absolutely 100% works! Creamy avocado paired with runny eggs is amazing. Top it with bacon, cheese, chives, sriracha, salsa, pretty much anything.

The little hole left was not big enough to hold the whole egg. You’ll get into trouble if you try. Use a spoon to make a good-sized hole in the avocado and add the eggs. Reserve any extra avocado to place on top.

Even after trying this recipe, I’m still left wondering if you can actually grill avocado in the oven. Most of us have only ever eaten it raw, and the application does seem a bit strange. I promise it’s good, though. To bake avocados, I recommend preheating the oven to 425 degrees.

Season with salt and pepper. Cook for 60-90 seconds until eggs are set. Make sure to place the avocado in a bowl or microwave-safe dish as sometimes the eggs can run out a bit.

How to ripen avocados quickly?

There’s nothing worse than a hard avocado. They have almost no flavor and are almost unusable. If you don’t have time to wait for your avocado to ripen naturally, there are a few tricks people can use.

Personally, I haven’t tried these yet since we have an endless supply of avocados, but please let me know if you’ve tried these and if they work. The most popular method is to wrap the avocado in foil and bake it in a 200-degree oven for 10 minutes to an hour, depending on the firmness of the avocado.

According to The Kitchn, this method will soften the avocado, but it won’t taste quite the same. Not bad, just different.

  • Chop bacon: Crispy bacon, eggs and avocado. It’s a match made in heaven and my absolute favorite way to eat grilled avocado and eggs.
  • Sun-dried tomatoes: For a meatless option, I like to use chopped sun-dried tomatoes instead of bacon. The slightly smoky avocado and runny eggs were delicious.
  • All bagel seasonings: If you’re like almost everyone on the Internet today, you have a bottle of this seasoning mix sitting in your pantry. Add it immediately to anything containing avocado. It couldn’t be more delicious.
  • Chives or green onions: I like to add a mild onion flavor to this dish, so usually I use fresh chives or scallions. The mild flavor doesn’t overpower the other ingredients. Almost any fresh herb will work.
  • Pico de gallo, salsa or Sriracha: If you like egg hot sauce, you’ll want it here too. You can use standard hot sauce, but I prefer to use pico de gallo, salsa, or sriracha for an Asian twist.
  • Smoked salmon: I’ve been eating a lot of smoked salmon lately and it’s really a natural addition to avocado baked eggs. To make it easier to eat, I cut the salmon into small pieces and placed them on top.
