Creamy Smoked Salmon Pasta

- Pour in the white wine and simmer for about 2 minutes, reducing the heat slightly.


- Add the crème fraîche or mascarpone cheese directly to the pan along with the lemon zest and lemon juice. Stir and simmer for 2-3 minutes.


- Stir in chopped dill, capers, black pepper and a pinch of salt.


- Add the drained linguine to the skillet and toss to coat, sprinkling with some of the reserved pasta water to loosen it up if a silky coating is desired.


- Remove skillet from heat. Gently stir in smoked salmon. The residual heat will soften it without cooking or hardening it. Taste and adjust seasoning with lemon or pepper.


- Divide among warm bowls and finish with extra dill, lemon zest, or a drizzle of good olive oil.
