Brown rice takes longer to cook than white or regular rice, so this is not recommended unless you significantly increase the liquid and roasting time.
Any type of firm white fish will work, such as haddock or cod, as long as the fillets are similar in thickness to cod fillets.
Both are fine – just make sure the frozen fish is fully thawed and patted dry before baking.

- Preheat oven to 375 degrees F and grease a 9×13 baking pan. Add rice and broth to prepared baking dish.


- Cover tightly with foil and bake for 20 minutes.


- Top the rice with ½ cup of the crispy onions and cod fillets, drizzle the fish with oil, and season with garlic powder, paprika, salt, and pepper.


- Place the cubes of cream on top of the fillets. Cover the baking sheet tightly with foil and bake for 15 minutes.


- Uncover, top with remaining crispy fried onions, fresh parsley and Parmesan cheese and grill for another 5 minutes or until fish is cooked through and flaky.


- Garnish with extra fresh parsley and serve with lemon wedges or wedges.
