This healthy Tuscan chicken is a light olive garden imitation that combines tender chicken, fresh summer vegetables and a cream cheese-packed sauce. It can be ready in 30 minutes without any heavy cream and tastes like comfort food, but check each box for a lighter weekday dinner.

Here’s how to make a healthier version of your favorite olive garden dish:

1. Seasonal cooked chicken

Coat the chicken with seasoning and then apply it to a hot skillet until it turns browned and cooked. Then set it aside.

2. Stir-fried vegetables

Add pumpkin, tomatoes and garlic to the same pot. Cook until the tomatoes begin to break and the pumpkin is soft.

Expert tips: Once the cherry tomatoes start to break, move quickly. You want them to be juicy to help make the sauce, but it doesn’t go away so much that they go away. Turn down the heat before adding cream cheese. It melts more easily in this way and does not condense.
