I wanted to take a break from the usual grilled chicken breast to make a bolder version that could be used with my favorite Mexican recipes. So I turned on the barbecue and created this grilled chipotle ranch chicken as a smoky, spicy solution to my grilled chicken dilemma.

The kids hid theirs in the extra marinade I left aside, my husband stuffed him into the tortillas and I cut me into salads. Everyone is happy and it is now a weekly staple! Smoked potato chips with rich ranch and creamy yogurt are a game made in heaven, whether you use the grill on the grill or cool from the fridge.

You will find Chipotle peppers in small jars of Adobo sauce in the Hispanic or International Food section of most grocery stores. They are super universal. There is only one pepper (even a tablespoon of sauce) that adds a lot of flavor to marinades, seasonings, and dips.

How to Make Chipotle Ranch Roasted Chicken

1. Making sauce

Mix yogurt, Chipotle, ranch seasoning and vinegar until smooth. Taste and adjust the calories.

2. Marinated chicken

Pour half of the sauce over the chicken and marinate in the refrigerator. Save the rest for service.

Expert tips: Marinate for at least an hour, but longer time is better for a deeper flavor. Also, if your chicken breasts are super thick, make sure to smash them to an even thickness before marinating.

Cook the chicken on a grill or baking sheet until golden and cooked.

No grill? no problem: Use a cast iron skillet or grill indoors to achieve the same burning effect. You can also fry the chicken in a single layer in 375ºF form for about 10–12 minutes and then flip halfway.

Here’s how to store, reheat and prepare chicken in advance:

  • Shop: Leftovers in sealed containers in the refrigerator will last up to 4 days, or in the freezer for up to 3 months. The marinade will last in the refrigerator for up to 1 week.
  • Reheat: Warm gently in a frying pan over a 30-second burst on low heat or microwave. If frozen, thaw the chicken overnight before reheating.
  • in advance: Marinate the chicken 24 hours in advance and store the sauce separately.
