- Mix all ingredients outside the steak in a food processor or blender bowl. Pulse several times to make the marinade paste.
- Place the entire steak (S) and marinade in a gallon-sized plastic bag and close the seal. Squeeze around the steak and marinade to completely cover the steak. Refrigerate for at least 1 hour, up to 24 hours.
- After marinating the steak, roast it on high heat for 15 minutes. Grill gently with olive oil if needed. Remove the steak from the marinade and discard the bag. Place the steak on the grill and cook on each side for 5-8 minutes, or until the meat is cooked and crispy outside, then cook until the desired internal temperature. notes: Thin steaks only need to be cooked on each side for a few minutes, while thicker meats take longer to cook. Adjust the grill heat while cooking to ensure there is a little charcoal, but the meat does not burn or catch fire.
- Remove the steak from the grill and let it sit for 5 minutes.
- Cut into pieces and serve with tacos, rice bowls, salads, etc.

This makes a lot of marinades – you can marinate 5 pounds of steak with a single recipe (or marinate steak and chicken at the same time.)
The Skirt Steak is very effective with this recipe – thick enough to have some pink in the middle and a burnt drill bit on the outside. Even thick steaks, like the triple-tip roast, will be delicious, but it takes longer to cook.
