In the spirit of focusing on some simple joy, I want to share something simple: simple and healthy Airbnb recipes. I’ve been wanting to release this book since we’ve returned from Spain and now we’re in September. There is no time like now 😉

Why we cook at Airbnbs while traveling

When we traveled, we already learned that every meal didn’t work for us. It gets expensive quickly, dining in restaurants can be heavy, and kids don’t quite like sitting at the table three times a day.

Things to do for us: Have a big meal every day (usually lunch or dinner), enjoy a quick bite, or a simple and fresh meal in Airbnb. Not only is it more budget-friendly, it is also fun to shop at the local market, enjoy regional specialties and gather for casual family dinners. In addition, the restaurants and cafes we dined were great. It’s better to squander a bigger meal than a bunch of mediocre places throughout the day.

Some of my favorite memories of our trip to Spain were cooking with my friend Sam. She can make a dish or two, I will do something at Airbnb, we will walk over and the kids will run around with us sharing delicious food, quality wine and good company. This is what a vacation meal should feel! We are looking forward to our family dinners, and since they live there, they don’t need to feel like they have to feed us all or go to restaurants multiple times a week. We shared the cooking and cleaning loads, which was amazing.

Airbnb grocery shopping list

When we checked in Airbnb, I almost always grabbed these staples:

Granola or cereal

Almond milk (or other milk of choice)

Coffee (Instant hair loss in Spain is 2 euros, tasted paradise)

Supplement: I always bring my nutritional support powder + vitamins with me

Relaxed Airbnb breakfast ideas

Yogurt parfait with granola + berries

Eggs and fruit toast

Protein Pudding and Berries

Spanish tortillas (homemade or pre-made from local markets)

Egg casserole (if you stayed in one place for a week or more)

Quick Airbnb lunch and dinner recipes

These meals appear with minimal preparation and local ingredients:

Barbecue restaurant chicken enchilada filling

Large salad bowl with greens, vegetables, beans or tuna, olive oil and lemon

Dinner with local cheese, meat, olives, bread and vegetables

Simple pasta night: pasta, olive oil, garlic (or garlic powder), seasonal vegetables, and proteins like shrimp or chicken

Roasted protein + vegetables (if Airbnb has an outdoor grill)

Chopped Greek salad (cucumber, pepper, onion, olives, artichokes, light tomatoes, feta, mint and rosemary, chicken and lemon vinegar)

Traveling doesn’t have to mean blowing your budget or feeling sluggish after a heavy meal. With a quick grocery trip and some easy recipes, you can enjoy healthy, delicious meals in Airbnb.

I think it’s a bit special to party at the table with family or friends and share the food you’ve prepared. This made the trip even more memorable.
