We are about a block away from a delicious Greek restaurant, but every time we go I order chopped shrimp salad. Even if there is actually no Greek, this is my favorite thing on my menu. For weeks I’ve been trying to recreate it at home and eventually reach the right combination. The key is to add a lot of fresh herbs to the salad, including mint, basil, parsley, chives and dill. It was so good when paired with creamy avocado and sweet purse shrimp.
Since the salad itself has a lot to do, it requires a really simple dressing like this lemon vinegar. It is mainly made of lemon juice and olive oil and mustard, salt and pepper to balance the acidity of the lemon juice. I have been using this seasoning on salads and it has become one of our family’s favorites.
Now, another important thing to note about salads. If you can find regular fresh radishes or selected radishes. The pickled radish (like the ones in the photo) does add something special, but the crisp fresh radish is just as good.

- If you don’t like shrimp, you can always replace tuna, chicken, salmon, steak or tofu in your salad.
- I really recommend buying all the fresh herbs for this salad, but if you need to cut costs, you can use dried dill and chives. Simply reduce the amount you use and add it to the dressing instead of directly into the salad.
- Pine cones will be great in this salad because they taste very good with herbs and dressings. I also like the fragility of some almonds or sunflower seeds.
- You can add more vegetables to this salad if you prefer. Try adding some purple cabbage to add crust, chopped beets or spots of white beans.
What are the best shrimps to buy salads?
This is the time when you don’t need to splurge on bigger shrimps. Since the shrimp is chopped in the salad, I usually buy medium (31-40 counts) or small (41-50) shrimp for this recipe. Counting refers to the number of shrimp you will usually find in a pound of shrimp. Smaller shrimps are usually cheaper. One thing worth noting is that I wouldn’t buy Bay Shrimp for this recipe as they taste very different and very small.
For the easiest preparation, look for raw shrimp that were shelled and removed. Freeze is good, put them in the refrigerator or under cold water overnight before poaching. I do not recommend poaching frozen shrimps as the outside will be overcooked when it is grown inside.
How long will this salad be kept in the refrigerator?
It is best to offer this shrimp salad immediately, as lettuce and fresh herbs will wither wither with the dressing. If you need to prepare your salad in advance, poach the shrimp first and let it cool completely. Make seasonings and store them separately. You can then prepare the vegetables and store them in an airtight container with tissues on it to absorb excess moisture and prevent wilt. When you are ready to eat, just throw the salad together.
