  3. Softening wrapping paper: Soak a piece of rice paper in water for about 20 seconds until it is flexible.

When it comes to delicious meals rich in fresh vegetables and bold flavors, it’s hard to beat these veggie spring rolls with peanut butter.

Prevent the screen from becoming dark

  • Make peanut butter first. In a medium bowl, mix together peanut butter, rice vinegar, soy sauce, honey, sesame oil, garlic, ginger and water, then mix until completely combined and smooth, then set aside.

  • To assemble the spring roll, fill a wide shallow bowl or pie pot with about an inch of warm water. Wrap a piece of rice paper in water and let it soften for about 20 seconds, you want it to be flexible, but not a super floppy disk. Carefully remove it and place it flat on a damp cotton lint towel or on a flat cleaning surface.

  • Leave about an inch around the edges of the rice paper wrap, first place a few pieces of butter lettuce on the third of the wrap, then put a small portion of cabbage, carrots, pepper, cucumber, avocado, and some fresh herbal leaves on top.

  • Pick up the long edges of the wrapper closest to the filling, roll it onto them, then fold the two outer edges similar to wrapping burritos, and roll the wrap completely.

  • Repeat steps 2-4 in the rest of the package and enjoy! Spring rolls are best served immediately.
