You can prepare this kofta chicken for meals and serve it with Israeli salad and artichoke hummus or add it to pita bread as a delicious sandwich and enjoy the flavor of Middle Eastern cuisine.

When I make this recipe, I usually always build a cereal bowl. Start with some cooked brown rice, cauliflower rice or farro. Throw in some green or spinach and other vegetables. Then, stack on the chicken, chopped tomatoes, cucumbers and all the condiments. I added hummus, Baba Ganoush, feta and some businessman Joe’s Zhoug.

What is kofta?

Kofta, sometimes called Kefta, is a traditional Middle Eastern ground meat barbecue dish. Usually, ground lambs are seasoned with a lot of spices and then form logs and placed on skewers. Once cooked, it can traditionally be served with topped bread, pita bread, yogurt, garlic or tahini.

notes: Regarding mint, make sure to use dry pricks. Mint has a stronger flavor and doesn’t work in the recipe. It is best to exclude fresh mints or just use mint.

Traditionally, cofta is made from ground lamb, ground beef, or a combination of both. This recipe uses ground chicken to lighten it, or you can use turkey. To make a kofta meat mixture, add the spices to the ground meat along with some fresh parsley and garlic.

To make things quick and easy, this recipe simply uses the Kofta spice mixture to season your bowl with cooked ground meat. However, if you prefer a more realistic presentation, you can also use the same mixture to make meatballs or traditional kebabs.

  • Preparation for meals: Make ground chicken and then wrap it in a single container with rice. Pack the toppings separately to avoid moisture. The chicken stayed in good condition in the refrigerator for 3-4 days.
