When it comes to breakfast (or to be honest), I almost always want to eat Mexican food, from fridge breakfast burritos to these breakfast to breakfast toasts. I’ve been looking for quick and easy Mexican style breakfast to prepare my family.

Huevos Rancheros (raiser’s egg) has always been my favorite dish. It is made from warm tortillas, eggs, fresh avocados, Queso murals and homemade Ranchero sauce. Huevos Rancheros dishes are everything you can ask for in a savory Mexican breakfast dish.

Serve this dish as is, or add a thin layer of beans to add a ton of added flavor. I made this Huevos Rancheros recipe for family and friends and I agree with the same every time.

What is Huevos Rancheros?

Huevos Rancheros is a traditional Mexican breakfast dish that translates into “raiser’s eggs.” It usually consists of tacos topped with sunny eggs and suffocated in a light spicy tomato sauce. It is usually done with toppings like Queso Fresco, Avocado and Cilantro.

Here are some things you should know before making this recipe:

  • Make sauce: The secret element to making a drooling Huevos Rancheros is to make your own sauce from scratch in a blender! Store-buyed sauces (or salsa or tortilla sauce) work in pinching, but I highly recommend making them yourself if you have the time. All you need is tomatoes, onions, garlic, chili peppers, jalapeno or serrano peppers, and some spices like fennel and oregano. It takes 10-15 minutes.
  • Egg boiled differently: While Huevos Rancheros is traditionally made from egg-boiled eggs, you can cook them as you like. This dish tastes scrambled eggs, fried eggs and everything in between will be great.

How to make Huevos Rancheros

Making Huwslancheros at home is very easy! Here is a quick breakdown:

1. Tacos

Heat the oil in the frying pan over medium heat. Add the tortillas at a time and fry for a few seconds on each side until puffed and lightly browned. Set aside.

2. Boiled eggs

In the same skillet, cook eggs as you like. The sunny side is traditional, but also hyped or overly shocking work.

Tip: Make sure to add salt and pepper to the eggs. You want to make sure the egg yolk is a real way to flow.

3. Build a plate

Place two tortillas on a plate. Top with eggs and tablespoons and top with warm lanchero sauce. Add the sliced avocado, crumble on Queso Fresco, and sprinkle with cilantro.

Huevos Rancheros is the ideal dish for first place and home cooks. If you are looking for a way to make this dish yourself, here are some of my important tips and changes:

  • Add some beans: Beans are a way to bring this Mexican breakfast dish to the next level of deliciousness and nutrition. Personally, I recommend adding black beans or some quick beans.
  • Switch your tortillas: Don’t like tortillas? no problem! You can easily swap them for flour tortillas.
  • Exchange your herbs: For those who are not cilantro fans, you can leave it out and use fresh chives or parsley.
  • Add some extra protein: If you are looking for something more heartwarming, chopped chicken diced, meat-eating (pork) or beef megaka will add deliciousness to this dish.
  • Add vegetables: This dish is delicious with some stir-fried spinach, faugita veggies, roasted sweet potatoes or butternut squash.

This is one of those classic breakfast dishes that are perfect for mixing and making your own dishes! To get you started, here are some of my favorite tips:

  • Sasha: To add some extra flavor, try pairing Huevos Rancheros with fresh salsa. Some of my best choices include Pico de Gallo, corn salsa and creamy avocado salsa cape Verde.
  • Sauce: While this recipe requires Ranchero sauce, you can switch based on flavor preferences and food at home. Try this creamy butter sauce or some jalapeno pasture seasoning.
  • tomato: Fresh tomatoes are a delicious and nutritious filling for this breakfast dish. Chopped cherry tomatoes or roman tomatoes work well.
  • cheese: This delicious Mexican cheese tastes great in this dish. If you can’t find anything, you can swap it for Queso cotija, Feta cheese or chopped Mexican cheese.
  • Hot sauce: If you want extra calories, try drizzling some Sriracha or your favorite hot sauce on the dish before it.
  • sour cream: Refreshing creaminess is the ideal way to balance the strong and bold flavors of dishes.
  • Greek Yogurt: For lighter sour cream alternatives, try adding some of the creamy flavors.
  • Lemon juice: Squeezing fresh lime juice is the ideal way to make your plate shine.
  • Avocado Seasoning Sauce: If you want to use a ball of avocado sauce (rather than sliced avocado) to put the plate on top! Like I said, this is the ideal breakfast dish for your preference.

How to store Huevos Rancheros

Since this dish takes only 15 minutes to prepare, I highly recommend you to eat it fresh. Cooked eggs are not well stored, but the sauce can be stored in the refrigerator.

I really don’t recommend frozen this dish. However, you can definitely store your homemade Ranchero sauce in the refrigerator. To store, simply transfer the excess seasoning to an airtight bag or container and freeze it Up to 3 months.

Is Huevos Rancheros healthy?

Yes! This Mexican breakfast dish is wholesome, satisfying and nutritious. Since the sauce is also made from scratch, there is no artificial sugar or preservative. If you are looking for a healthy breakfast filled with protein, this is a great choice.

As far as the restaurant version goes, it really depends on how it is made. Some restaurants use quesadillas or Tostadas to make it healthy. A large amount of cheese or oil can also change nutritional value.

How should I prepare eggs for Huevos Rancheros?

Huevos Rancheros are traditionally made from eggs beside the sun, but you can really use any egg you like. Fry, fry or rice – feel free to get creative. You can even use scrambled egg whites as a lighter plate.

Homemade Lanchero sauce: 1 tbsp olive oil, 1/2 onion, diced, 4 Roma tomatoes, diced, 1 jalapeno, diced, 1 chipotle pepper in adobo sauce, diced, 2 cloves garlic, minced, 1 tbsp ancho chili powder, 1/2 tsp cumin, 1/2 tsp oregano (preferable Mexico), 1/2 tsp kosher salt, 1/2 cup chicken broth, 1/4 cup cilantro, chopped and 1 lime, juice. direction: Heat olive oil over medium heat. Add onion and jalapeno. Cool for 5-7 minutes until soft. Then add tomatoes, potato chips, pepper, garlic, pastoral chili powder, cumin, oregano and salt. Cook for 5-7 minutes until the onions and peppers are tender, and the tomatoes break down and concentrate. Turn off the heat and stir the chicken broth, coriander and lime juice. Use an immersion blender to mix it into a smooth sauce or add to the blender and mix until smooth. Let cool and store in the refrigerator.
