Cranberry Almond Chicken Salad Recipe
Nothing better than a delicious chicken salad for lunch, this version of cranberry, almond and Greek yogurt is so good! Perfect for sandwiches, wraps, green salads, cookies and more.
I have a friend who is totally obsessed with the cranberry almond salad she bought at Costco. Those pre-distributed individual foods. She was having lunch almost every day, and she offered it at every party she had ever had.
The only problem is that her chicken salad habit is actually very expensive. She is trying to make more food at home, so the past weekend we set out to rebuild her favorite cranberry almond chicken salad.
After a few attempts, we came up with a version we actually liked more than the one she usually bought. With cooked chicken breast, dried cranberries, celery, thinly sliced almonds, and simple yogurt-based dressing- it was really delicious. She likes its honey to sweeten it, although I prefer not to have it.

What is the best chicken salad chicken?
There are many options when choosing chicken to make homemade chicken salads. This is the most popular choice and thing when choosing.
- Barbecue Chicken: This is my go-to choice because it’s fast, affordable and easy. I either grab a chicken in the store or make a barbecue shop in a slow cooker.
- Leftover boiled chicken: If you have any leftover chicken in the refrigerator, you can use it to make a chicken salad. Generally speaking, use something without sauce or competitive flavor. I like to make salads with the rest of the roast chicken.
- Quick poaching chickens: For something quick, add some chicken breasts to the pan and cover them with about 1 inch of water or broth. Cook on low heat and turn the heat to low. Cover and cook for 10-15 minutes, until cooked. Remove and chop.
- Canned chicken: If you like canned chicken breasts, this is a great choice for this salad. Make sure to drain the chicken completely so that the salad does not turn into water.
Cranberry Almond Chicken Salad (and swap!) What you need!
- Cooked Chicken: Any cooked chicken can work in this salad. Swap in tuna, salmon, chickpeas (slightly mashed) or tofu.
- mix: The secret to this salad is a delicious mixture including celery, dried cranberries, thinly sliced almonds, green onions and poppy seeds. These can be customized for any crunch and sweet flavor you like – raisins, apricots, cashews, walnuts, red onions, carrots or chives.
- dressing: To get a less rich creamy seasoning, the secret is to combine mayonnaise, sour cream, Greek yogurt, honey and vinegar. Although you can ignore one of the three main ingredients, this combination does work.
How to serve chicken salad
Most people think of sandwiches when it comes to chicken salads, but there are many different options from packaging to salads and so on.
- Sandwiches and parcels: Grab some toast or low carb wrap. In chicken salad and some crispy lettuce, thinly sliced cucumbers and tomatoes.
- salad: Make a large green salad and serve a few spoonfuls of chicken salad on top. Many people find that they don’t even need to add seasonings because the chicken salad adds a lot of flavor.
- Cookies or pretzels: Think of the chicken salad as a dip and serve it with your favorite cookies, pretzels, fries or toast.
- Raw vegetables: Sliced mini bell peppers, carrots, cucumbers, Endive, celery, etc. This is great.
- Lettuce wrap: Grab some butter lettuce or romaine lettuce and substitute the bread with lettuce.
Store remaining chicken salad
If you have leftover chicken salad, store it in the refrigerator for 3-4 days and store it in an airtight container. If you know you’ll do this ahead of time, omit the almonds as they soften over time.
