One of my favorite things to use during a busy few weeks like this: good barbecue chicken!

(I know it’s hot and covered in plastic, but what can you do? You can make your own chicken completely, but we’re talking about fast hacking today!)

Back-to-school seasons are always quick to sneak up, and suddenly the “night supper” feels like a juggling show between homework, after-school activities and the usual bedtime. It’s fun because the summer feels so cold and now we’re back to school… it feels like sheer chaos.

One of my favorite secret weapons for a quick, healthy dinner? Store-purchased barbecue chicken. It has been cooked, tender and packaged protein, so cut the preparation time in half while keeping the meal healthy and satisfying.

Add fresh herbs and spices: Bright flavors like lemon, coriander, cumin or chili powder can instantly turn leftovers into new dishes.

Here are some of my top pick recipes and dining ideas that blend together in 30 minutes or less.

1. Fried rice with chicken and vegetables

Quick stirring is for lifeguards on weekdays.

raw material:

2 cups chopped barbecue chicken

3 cups of cooking rice (leftovers or freezing works very well)

2 cups mixed frozen vegetables

2 eggs, stir gently

2-3 tablespoons coconut amino or low-sodium soy sauce

1 tablespoon olive oil or sesame oil

instruct:

Heat oil in a large skillet or wok.

Add the vegetables and cook until tender.

Push the vegetables to the side and scramble the eggs in the same pot.

Stir the rice, chicken and coconut aminos; cook until heated.

Sprinkle with green onions or sesame seeds. Drizzle with Sriracha.

2. Barbecue restaurant chicken spicy sauce

This is always a family favorite and freezer friendly.

3. Barbecue chicken stuffed sweet potatoes

A quick, natural gluten-free dinner with just a few ingredients.

raw material:

4 medium sweet potatoes, roast or microwave until soft

2 cups chopped barbecue chicken

1/3 cup barbecue sauce (look for low-sugar or clean ingredient brands)

Garment of chopped green onions and/or perfume cheese or feta

instruct:

Mix the chicken with BBQ sauce in a bowl.

Split the sweet potatoes and fluff the inner fuzz with a fork.

Garnish with grilled chicken mixture with green onions and cheese.

4. Chicken Tortilla Soup

Perfect for cold nights or a pot meal needed.

raw material:

2 cups chopped barbecue chicken

4 cups chicken soup (homemade or store-buyed)

1 diced tomato

1 cup of black beans, rinse

One onion

3 cloves of garlic

1/2 teaspoon cumin, 1 teaspoon chili powder, 1 teaspoon oregano

Fresh coriander, lime wedges, cheese, tortillas, for top

instruct:

Saute the garlic and onion for a few minutes until soft. Add the remaining ingredients to a large pot and cook for 20 minutes.

Adjust the flavor of the seasoning.

Pair with toppings hot.

5. Greek Chicken Pita Package

Lightweight fresh dinner option, easy to customize.

raw material:

2 cups chopped barbecue chicken

4 whole wheat or gluten-free pita cakes

1 cup chopped cucumber

1 cup chopped tomatoes

1/4 cup purple onion, chopped

1/4 cup chopped kalamata olives

1/2 cup tzatziki sauce or hummus

Wool cake crushed

Fresh mint

instruct:

Heat pita briefly in the oven or microwave.

Layered with chicken, cucumber, tomatoes, onions, olives and tzatziki. Top with fresh mint.

Pack and eat immediately.

Time-saving home-school dinner tips

Batch preparation for Sunday: Cook 2 chickens, prepare vegetables and meals or quinoa. If you prefer homemade barbecue chicken, it’s time to go! Pop it out on the oven or Traegar.

Double Recipe: Make leftovers enough for lunch the next day.

Mix flavors: Use different spice mixtures or seasonings (such as Buffalo, Teriyaki, or Pesto) to keep the meal fun.

Keep the pantry convenient: Coconut Arminian cake, salsa, canned beans, frozen vegetables and olive oil make weekday dinners faster.
