Pineapple Pretzel Salad Dessert

- Press the mixture into a 9 x 9-inch baking dish. Bake for 10 minutes. Let it cool completely.
- Stir the cream cheese and sugar until smooth, then mix in the vanilla extract. Fold with a whip until fluffy and evenly mixed.
- Spread over the cooled crust, making sure to seal all the way to the edge. Cool in the refrigerator when preparing the toppings.
- Heat the pineapple juice and lemon juice until hot, then stir in the lemon gelatin until completely dissolved. Let cool for 10-15 minutes.
- Stir in the crushed pineapple.
- Pour gently onto the butter layer, evenly and smooth. Cool until at least 4 hours or overnight for best results.
- To eat, cut it into thick squares. Garpe with whipped cream, pineapple cubes or fresh mint leaves.
